Ingredients
  

For the Chicken

  • 600 g boneless, skinless chicken breast or thigh, cut into bite-sized pieces
  • 1 tsp sweet paprika adds mild flavor and color
  • 1 tsp garlic powder enhances overall flavor
  • ½ tsp sea salt flakes boosts taste
  • ½ tsp freshly cracked black pepper adds mild heat
  • 1 large egg binds ingredients
  • 60 g cornflour (cornstarch) provides crispiness
  • Oil, for frying necessary for cooking

For the Sauce

  • 1 tsp freshly minced garlic adds aromatic flavor
  • 1 tsp freshly minced ginger provides warmth and spice
  • 125 ml sweet chili sauce brings sweetness and heat
  • 60 ml tamari or all-purpose soy sauce adds depth of flavor
  • 60 ml rice wine vinegar or lime juice balances sweetness

For Serving

  • Steamed rice the perfect base
  • 1 large spring onion (scallion), finely sliced adds freshness
  • 1 tsp sesame seeds offers a light crunch

Instructions
 

Preparation

  • In a large mixing bowl, combine the bite-sized chicken pieces with sweet paprika, garlic powder, sea salt flakes, and black pepper.
  • Beat the egg in a separate bowl until it’s well combined.
  • Sprinkle the cornflour over the seasoned chicken and pour in the beaten egg. Mix everything together thoroughly.

Cooking

  • Heat a generous amount of oil in a frying pan over medium-high heat.
  • Carefully add the coated chicken pieces to the hot oil one at a time, ensuring not to overcrowd the pan. Fry until golden brown and cooked through.
  • Transfer the cooked chicken to a plate lined with paper towels to drain excess oil.
  • In the same frying pan, add the minced garlic and ginger and sauté until fragrant.
  • Pour in the sweet chili sauce, tamari or soy sauce, and rice wine vinegar or lime juice. Simmer until slightly thickened.
  • Add the crispy chicken back into the pan and toss gently to coat it in the sauce.

Serving

  • Serve the chicken over a bed of steamed rice, topping with finely sliced scallions and sprinkle with sesame seeds.

Notes

Adjust sweet chili sauce levels based on your heat preference. Store any leftovers in an airtight container and consume within three days.
