Instructions
 

Cooking the Potatoes

  • Place the baby potatoes into a large pot filled with salted water and cover completely. Bring to a boil over medium-high heat.
  • Reduce heat to medium and let cook for about 15 to 20 minutes until fork-tender. Avoid overcooking.
  • Carefully drain the potatoes using a colander and allow to sit to evaporate excess water.

Prepping for Baking

  • Preheat your oven to 425°F (220°C) and prepare a baking sheet by lining with parchment paper.
  • Transfer the drained potatoes to a large bowl. Drizzle olive oil over the potatoes and sprinkle garlic powder, onion powder, salt, and pepper. Toss to coat evenly.

Baking and Serving

  • Place the seasoned potatoes on the prepared baking sheet and gently smash each potato with the back of a fork.
  • Sprinkle shredded cheese over the smashed potatoes.
  • Bake in the preheated oven for 20 to 25 minutes until edges are golden brown and crispy.
  • Once cooked, sprinkle chopped green onions on top while hot and allow to cool slightly before serving.
  • Serve warm with sour cream on the side.
