  • 2 cups cooked chicken shredded, rotisserie or leftover
  • 2 cans white beans drained and rinsed; cannellini or great northern
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 can diced green chiles
  • 3 cups chicken broth
  • 1 cup corn frozen or canned

Spices and Seasoning

  • 1 tsp cumin
  • 1/2 tsp oregano dried
  • 1 tsp salt or to taste

For Creamy Finish

  • 4 oz cream cheese softened
  • 1/4 cup heavy cream or sour cream
  • 1 lime juiced

Instructions
 

  • In a large pot, sauté onion and garlic until soft and fragrant.
  • Add shredded chicken, white beans, green chiles, corn, and chicken broth. Stir to combine.
  • Season with cumin, oregano, and salt. Simmer over medium heat for about 20–25 minutes.
  • Reduce heat and stir in cream cheese and heavy cream. Mix until fully incorporated and creamy.
  • Finish with a squeeze of lime juice. Taste and adjust seasoning if needed.
  • Serve hot with toppings like shredded cheese, cilantro, tortilla chips, or sour cream.

Notes

Customize this chili with Monterey Jack cheese, jalapeños, white corn, or even bacon crumbles. For a vegetarian version, use more beans and sautéed peppers. Coconut milk makes a delicious dairy-free substitute.
