  • 15 oz. fire roasted diced tomatoes adds moisture and depth
  • 2 cups chicken broth creates the sauce base
  • 2 oz. cream cheese adds creaminess and richness
  • 3 whole green onions, sliced adds a fresh, mild onion flavor

Instructions
 

Preparation

  • Combine the smoked paprika, oregano, thyme, garlic powder, onion powder, cayenne pepper, black pepper, and salt in a small bowl.
  • In a large pot, heat the olive oil and butter over medium heat until shimmering.
  • Add the diced yellow onion and sauté for 3-4 minutes until translucent and fragrant.
  • Introduce the seasoned chicken breast and sear on all sides for 5-7 minutes until lightly browned.
  • Stir in the fire-roasted diced tomatoes and allow to simmer for a couple of minutes.
  • Pour in the chicken broth and bring to a gentle boil.
  • Once boiling, add the uncooked penne pasta, ensuring it is fully submerged.
  • Cook the pasta until tender but still al dente.
  • Reduce heat and mix in the cream cheese until fully melted.
  • Add the sliced green onions and gently stir to combine all elements, then serve.

Notes

For best results, use fresh herbs, cut chicken into uniform pieces, and ensure cream cheese is softened before use. Taste and adjust seasonings as needed.
