  • 1 lb chicken thighs, boneless skinless 4 tender pieces
  • 1.5 tablespoons avocado oil for moisture
  • 1 teaspoon kosher salt to taste
  • 1 teaspoon cracked black pepper to taste
  • 1-2 tablespoons butter for richness
  • 1 cup yellow onion, diced small, aromatic
  • 1 tablespoon garlic, minced aromatic
  • 1 cup cherry tomatoes juicy
  • 1 cup chicken bone broth for depth of flavor
  • 1/4 cup sun-dried tomatoes, roughly chopped intense flavor
  • 2-3 ounces baby spinach for freshness
  • 1/2 cup heavy cream for creaminess
  • 1/4 cup parmesan cheese, grated for savory flavor

Instructions
 

Preparation

  • Season the chicken thighs with kosher salt and cracked black pepper on all sides.
  • Heat the avocado oil in a large skillet over medium heat until shimmering.
  • Add the seasoned chicken thighs to the pan and cook for about 6-7 minutes on each side until browned and cooked through.
  • Remove the chicken from the skillet and set aside.
  • In the same skillet, melt 1-2 tablespoons of butter over medium heat.

Cooking the Sauce

  • Add diced yellow onion to the skillet and cook until soft and translucent for about 3-4 minutes.
  • Stir in minced garlic and cook for another minute until fragrant.
  • Add cherry tomatoes, stirring until they soften and burst over about 3-4 minutes.
  • Pour in chicken bone broth and scrape any browned bits off the bottom of the skillet; let simmer for 5 minutes.
  • Stir in chopped sun-dried tomatoes and baby spinach, cooking until spinach wilts for 2-3 minutes.
  • Reduce heat to low and slowly add heavy cream, stirring until incorporated and warmed through.
  • Finally, sprinkle in the grated parmesan cheese and stir until melted; return cooked chicken to the skillet, coating it in the sauce.

Notes

Serve over rice or pasta to soak up the sauce. Excellent leftovers for lunch.
