Preparation

  • Heat the olive oil in a skillet over medium heat. Add the chopped onion and sauté until translucent, about 3-5 minutes.
  • Add the minced garlic to the skillet and cook for about 1 minute until fragrant.
  • Stir in the cubed chicken breasts, cooking until fully cooked and no longer pink, about 5-7 minutes.
  • Add the chopped spinach, cooking for 2-3 minutes until wilted.
  • Pour in the condensed cream of mushroom soup and milk, stirring until a creamy consistency is achieved.
  • Mix in the grated Parmesan cheese, salt, black pepper, nutmeg, oregano, and red pepper flakes if using, stirring until the cheese melts.
  • In a large pot, bring salted water to a boil and cook the pasta according to package directions until al dente.
  • Reserve a little pasta water, drain the rest, and add the pasta to the skillet, tossing to coat with the creamy sauce. Use reserved pasta water if needed.
  • Adjust seasonings as necessary, then serve. Garnish with chopped parsley if desired.

Notes

For best results, use high-quality chicken breasts and reserve pasta water for adjusting sauce consistency. Consider variations such as adding sun-dried tomatoes or using whole wheat pasta.
