  • 1 teaspoon dried parsley adds freshness
  • 1/2 teaspoon salt adjust to taste for seasoning
  • 1/2 teaspoon black pepper balances flavors
  • 1 teaspoon cornstarch mixed with 1 tablespoon water to thicken, if needed
  • 1 1/2 cups long-grain white rice absorbs flavor
  • 3 cups water or chicken broth liquid for cooking rice

Instructions
 

Preparation

  • Season the chicken thighs or breasts with salt, black pepper, garlic powder, onion powder, and paprika. Transfer to a plate and set aside.
  • In a large skillet, heat the olive oil and butter over medium heat. Add the seasoned chicken and cook until browned, about 5 to 7 minutes per side.
  • Remove the chicken from the skillet and set aside. Sauté diced onion until translucent, about 3 to 4 minutes.
  • Stir in minced garlic and cook for another minute, ensuring it doesn't burn.
  • Add chicken broth and heavy cream, stirring to combine. Let mixture bubble gently.

Cooking

  • Add dried thyme, dried parsley, additional salt, and black pepper. Stir well.
  • Return chicken to skillet and simmer for about 10 minutes.
  • Rinse the long-grain white rice in cold water to remove excess starch.
  • Remove chicken again, and stir in the rice and water or chicken broth into the sauce.
  • Arrange chicken back on top of the rice mixture. Cover and cook for about 18-20 minutes, or until rice is tender.
  • If sauce is too thin, mix cornstarch with water and stir into the skillet, cooking until thickened.
  • Taste and adjust seasonings before serving, adding a sprinkle of parsley if desired.

Notes

For the best results, season the chicken well, sauté the onions until translucent, and rinse the rice.
