Preparation

  • Begin by gathering all your ingredients, ensuring everything is within reach. Rinse and pat dry the chicken breasts, then season both sides with salt, pepper, garlic powder, onion powder, and paprika.
  • Heat olive oil in a large skillet over medium heat. Once shimmering, place the chicken breasts into the skillet and cook until golden brown, about 5 to 7 minutes per side.
  • Remove the chicken from the skillet and set it aside. In the same skillet, add butter and allow it to melt.
  • Add chopped onion and sauté until softened, about 4 to 5 minutes.
  • Add minced garlic to the onion mixture, cooking for another minute until fragrant.
  • Stir in the rice and allow it to coat in the mixture for about a minute.
  • Pour in the chicken broth and heavy cream, stirring to combine, ensuring the rice is submerged.
  • Return the chicken to the skillet, pressing it slightly into the mixture. Bring to a gentle boil, then cover and simmer for about 18 to 20 minutes until the rice is tender and liquid has absorbed.
  • Once cooked, stir in the Parmesan cheese, thyme, and oregano until the cheese melts and is well mixed.
  • Garnish with freshly chopped parsley before serving.

Notes

Serve alongside a simple green salad for a balanced meal. Store leftovers in the refrigerator for up to three days or freeze for up to three months. If it seems too thick while cooking, add a splash more broth or cream.
