Instructions
 

Preparation

  • Season the chicken thighs generously on both sides with Kosher salt and freshly ground pepper. Set aside.
  • Coat the seasoned chicken thighs with the all-purpose flour, making sure to cover all sides.

Cooking

  • Heat the salted butter and vegetable oil in a large skillet over medium-high heat.
  • Place the floured chicken thighs skin-side down in the skillet and cook undisturbed for about 6 to 8 minutes until golden brown.
  • Flip the chicken and brown the other side for another 6 to 8 minutes, then remove from skillet.
  • In the same skillet, add the sliced onion and cook until soft, about 3 to 4 minutes.
  • Stir in minced garlic, poultry seasoning, and paprika, and cook for another minute.
  • Pour in the chicken broth, scraping up any browned bits, and return the chicken, skin-side up, to the skillet.
  • Allow the chicken to simmer for about 30 minutes until cooked through.
  • Remove the chicken and whisk in the whole milk until the sauce thickens slightly.
  • Return the chicken to the skillet, spooning the creamy sauce over it before serving.

Notes

Ensure even browning of the chicken by not crowding the skillet. Use a splash of lemon juice to brighten flavors if desired.
