Preparation

  • Start by heating the olive oil and butter in a large skillet over medium heat.
  • Once heated, add the diced onion to the skillet and cook until softened and translucent.

Cooking

  • Place the chicken breasts in the skillet and sear for a few minutes on each side until golden brown.
  • Pour in the chicken broth, scraping up any bits from the bottom of the skillet.
  • Bring the broth to a gentle simmer, allowing the chicken to absorb the flavors.
  • Reduce heat and add the heavy cream, stirring to combine.
  • Add the sour cream and shredded cheese, stirring until fully incorporated and melted.
  • Season with paprika, Italian seasoning, salt, and black pepper, adjusting to taste.
  • Serve the creamy chicken mixture over the cooked rice and garnish with freshly chopped parsley.

Notes

Ensure the chicken breasts are evenly sized for even cooking. Adjust the sauce consistency by varying the broth and cream amount. Letting the dish sit after cooking allows flavors to deepen.
