Preparation

  • Start by heating the olive oil in a large skillet over medium heat until shimmering.
  • Place the chicken thighs, skin-side down, into the skillet and sear for about 5-7 minutes until the skin is golden-brown.
  • Flip the chicken thighs over and cook for another 5-7 minutes until nearly cooked through.
  • Remove the chicken from the skillet and set aside.
  • Add chopped onion to the same skillet and sauté for 3-4 minutes until translucent.
  • Stir in minced garlic and sliced mushrooms, cooking for an additional 5 minutes.
  • Pour in chicken broth and heavy cream, scraping the browned bits from the bottom.
  • Add dried thyme, salt, and black pepper, stirring well.
  • Return chicken thighs to the skillet, skin-side up, cover, and simmer for about 15 minutes until cooked through.
  • Finish with a knob of butter melted into the sauce.
  • Garnish with chopped fresh parsley before serving.

Notes

This dish pairs beautifully with rice or mashed potatoes. Ensure chicken is at room temperature before cooking and avoid curdling by simmering gently.
