Ingredients
  

For the base

  • 1 tablespoon olive oil for sautéing
  • 4 pieces al fresco Pasta Night Mild Italian Style Chicken Sausage sliced for flavor
  • 1 pound bow tie pasta also known as farfalle

For the sauce

  • 1 8 ounce package sliced mushrooms adds texture and earthiness
  • 1 pinch salt to enhance flavors
  • 2 cloves garlic grated or minced for aromatic flavor
  • 1/2 cup half and half provides creaminess
  • 1 5 ounce package baby spinach adds freshness and nutrition
  • 1/4 cup grated Parmesan cheese adds a salty, umami flavor
  • 1/3 cup shredded mozzarella cheese for melting and creaminess

Instructions
 

Preparation

  • Heat a tablespoon of olive oil in a large skillet over medium heat.
  • Add sliced chicken sausage and cook for about 5-7 minutes until browned. Transfer to a plate.
  • In the same skillet, add sliced mushrooms and cook for about 5 minutes until tender.
  • Stir in a pinch of salt and grated garlic, cooking for 1-2 minutes until fragrant.
  • Pour in 1/2 cup of half and half and simmer until warmed and slightly thickened.
  • Add the baby spinach and stir until wilted, about 2-3 minutes.
  • Stir in cooked sausage and grated Parmesan until the cheese melts.
  • Cook bow tie pasta according to package instructions, then drain.
  • Add the drained pasta to the skillet and toss to combine with the sauce.

Notes

Serve with a side salad or crusty bread. For a vegetarian option, replace the sausage with additional mushrooms or zucchini.
