Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large ovenproof skillet, heat one tablespoon of olive oil over medium-high heat.
  • Season the chicken breasts generously with kosher salt and freshly ground black pepper.
  • Sear the chicken in the skillet until it's golden brown, about five minutes per side.

Cooking

  • Lower the heat to medium and add the remaining olive oil to the skillet.
  • Introduce the minced garlic, fresh thyme leaves, and crushed red pepper flakes, stirring continuously for about a minute until fragrant.
  • Pour in the chicken broth, then add the chopped sun-dried tomatoes, heavy cream, and grated Parmesan cheese. Season with additional salt to taste and allow to come to a gentle simmer.
  • Return the seared chicken to the skillet, ensuring it's well-coated with the creamy sauce.
  • Transfer the skillet to the oven and bake until the chicken is fully cooked through, about 10-12 minutes.
  • Once done, transfer the chicken to a serving platter and drizzle with the creamy sauce. Garnish with torn basil leaves.

Notes

Enjoy with rice, pasta, or steamed vegetables. Can be stored in an airtight container for up to 3 days.
