Ingredients
  

Salad Ingredients

  • 2 cups elbow macaroni uncooked
  • 1/4 cup red onion finely chopped
  • 1/2 cup bell pepper chopped (any color)
  • 1/2 cup celery thinly sliced
  • 1/3 cup radish thinly sliced or diced
  • 1/3 cup dill pickles chopped

Dressing

  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1 tbsp yellow mustard
  • 1 tbsp apple cider vinegar
  • 1/2 tsp sea salt to taste
  • 1/4 tsp black pepper to taste
  • 1 tsp honey optional, for sweetness

Instructions
 

  • Cook macaroni according to package directions. Drain and rinse under cold water. Set aside.
  • Soak chopped red onion in cold water for 5 minutes to mellow its flavor. Drain well.
  • In a large bowl, whisk together sour cream, mayonnaise, mustard, apple cider vinegar, salt, pepper, and honey (if using).
  • Add cooked macaroni, drained onion, bell pepper, celery, radish, and pickles to the bowl. Toss gently until well coated.
  • Taste and adjust seasoning if needed. Cover and chill for at least 30 minutes before serving.

Notes

For a lighter version, substitute some or all of the mayo with Greek yogurt. The salad is best after chilling, and it travels well for potlucks and cookouts. Add fresh herbs like parsley or dill for extra brightness.
