Ingredients
  

  • 8 oz fettuccine or spaghetti (225 g)
  • 2 tbsp unsalted butter
  • 1 tbsp olive oil
  • 5–6 cloves garlic minced
  • 1 cup heavy cream or half-and-half for lighter option
  • 1/2 cup grated Parmesan cheese freshly grated
  • 1/2 tsp salt adjust to taste
  • 1/4 tsp freshly ground black pepper
  • 1/4 tsp red pepper flakes optional
  • 2 tbsp chopped parsley for garnish

Instructions
 

  • Bring a large pot of salted water to a boil and cook pasta according to package instructions. Reserve ½ cup of pasta water, then drain.
  • In a large skillet over medium heat, melt the butter and olive oil together. Add minced garlic and sauté for 1–2 minutes until fragrant but not browned.
  • Reduce heat to low, then pour in the cream. Stir and simmer gently for about 2–3 minutes to let the flavors blend.
  • Stir in the Parmesan cheese until smooth and creamy. Adjust thickness by adding a splash of reserved pasta water as needed.
  • Add cooked pasta to the skillet and toss to coat evenly in the sauce. Season with salt, pepper, and red pepper flakes if using.
  • Garnish with chopped parsley and serve immediately.

Notes

For added protein, top with grilled chicken or shrimp. Mix in vegetables like spinach, broccoli, or mushrooms for extra nutrition. Use reserved pasta water for a silky texture.
