Creamy Garlic Parmesan Skinless Chicken Thighs

Ingredients
  

Chicken and Seasoning

  • 8 pieces bone-in, skin-on chicken thighs (about 2 lbs) Ensure chicken is at room temperature before cooking.
  • 1 tbsp olive oil
  • 1 tsp salt Adjust to taste.
  • 1/2 tsp black pepper Adjust to taste.
  • 1/2 tsp garlic powder

Sauce Ingredients

  • 2 tbsp unsalted butter
  • 6 cloves garlic (minced) Be careful not to burn while sautéing.
  • 1/2 cup low sodium chicken broth Scrape the bottom of the pan to incorporate the fond.
  • 1 cup heavy cream Can be substituted with half-and-half for a lighter version.
  • 1/2 cup freshly grated parmesan cheese Ensure it melts completely for a creamy texture.
  • 2 tbsp fresh parsley (chopped, for garnish) Adds color and freshness.

Instructions
 

Preparation

  • Pat the chicken thighs dry with paper towels and season evenly with salt, black pepper, and garlic powder.
  • In a large skillet, heat olive oil over medium-high heat and add chicken thighs skin-side down.

Cooking

  • Cook until skin is golden brown and crispy, about 6-8 minutes.
  • Flip the chicken, reduce the heat to medium-low, and continue cooking for another 8-10 minutes.
  • Remove chicken from skillet and set aside.
  • In the same skillet, add butter and minced garlic, sauté for 1-2 minutes until fragrant.
  • Pour in chicken broth, scrape the bottom of the pan, and let it simmer for a couple of minutes.
  • Stir in heavy cream, mixing until combined and slightly thickened.
  • Add grated parmesan cheese, stirring until it melts completely.
  • Return chicken to the skillet, spooning sauce over it, and cover. Let simmer for another 10-15 minutes until cooked through.
  • Garnish with chopped parsley before serving.

Notes

Best served hot with rice or mashed potatoes. Leftovers can be stored in the fridge for up to three days.
