Preparation

  • Start by preparing the chicken breasts, trimming any excess fat if necessary. Pat the chicken dry with paper towels to help it achieve a nice sear in the skillet. Season both sides generously with salt and pepper.

Cooking

  • Heat a skillet over medium-high heat and add a little oil. Once the oil is hot, carefully place the chicken breasts in the skillet. Cook undisturbed for about 5-7 minutes on each side until golden-brown.
  • Remove the chicken from the skillet and set aside.
  • In the same skillet, reduce heat to medium and sauté the minced garlic for about 30 seconds until fragrant.
  • Pour in the chicken broth, scraping the bottom of the skillet. Bring to a gentle simmer.
  • Slowly add the heavy cream, stirring to combine and simmer until the sauce thickens.
  • Stir in grated Parmesan cheese, garlic powder, onion powder, Italian seasoning, and paprika. Stir until the cheese melts and emulsifies into the sauce.
  • If a thicker sauce is desired, mix cornstarch with a little water to create a slurry and add gradually while stirring.
  • Return the chicken to the skillet, spooning sauce over each piece. Let simmer until heated through.
  • Garnish with chopped fresh parsley before serving.
  • Serve warm, perhaps alongside pasta or steamed vegetables.

Notes

Ensure the chicken is dry before cooking for better browning. Taste and adjust seasoning before serving.
