Instructions
 

Preparation

  • Season the chicken thighs generously with salt and pepper on both sides.
  • In a large skillet, heat the butter and olive oil over medium heat.

Cooking Chicken

  • Place the seasoned chicken thighs in the skillet, skin side down, and sear undisturbed for about 5 to 7 minutes.
  • Flip the chicken thighs and cook for an additional 5 minutes.
  • Remove the browned chicken thighs and set aside.

Making the Sauce

  • In the same skillet, add the diced mushrooms and minced garlic; cook until softened and golden, about 5 minutes.
  • Pour in the chicken broth, scraping up any bits from the skillet.
  • Reduce heat to low, add heavy cream, and stir gently.
  • Return the chicken thighs to the skillet, spooning sauce over each thigh.
  • Cook together for another 10-15 minutes, or until the chicken is fully cooked and the sauce has thickened slightly.

Notes

For best results, ensure the chicken is properly seared for crispy skin. Don't rush cooking to allow sauce flavors to deepen. Rest chicken before serving.
