  • 3 tbsp Bob's Red Mill 1:1 gluten free flour thickening agent
  • 2 cups chicken broth savory liquid
  • 1 cup heavy cream for creaminess
  • 1 cup shredded parmesan sharp flavor
  • ¼ cup diced sun dried tomatoes sweet, tangy addition
  • 2 tbsp tomato paste intensifies tomato flavor
  • 1 cup diced spinach adds color and nutrition
  • 1 tbsp Italian seasoning extra herb flavor
  • ½ tsp smoked sweet paprika deep flavor
  • ½ tsp salt balances flavor
  • Chopped fresh basil for garnish freshness

For the Pasta

  • 12 oz farfalle pasta provides texture

Instructions
 

Preparation

  • Season the chicken thighs with smoked sweet paprika, Italian seasoning, salt, and black pepper. Set aside.
  • In a skillet over medium heat, heat the sun dried tomato oil. Add the seasoned chicken and cook until golden brown and fully cooked through.
  • Remove the chicken, let rest, then melt butter in the skillet and sauté shallots, garlic, and onion until translucent.
  • Stir in gluten-free flour to form a roux. Cook for about a minute until slightly golden.

Cooking the Sauce

  • Gradually whisk in chicken broth until smooth and thickened, about 2–3 minutes.
  • Add heavy cream and stir gently, allowing the sauce to thicken.
  • Mix in parmesan cheese, sun dried tomatoes, tomato paste, and spinach until cheese melts and spinach wilts.

Combining

  • Slice the rested chicken and return to the skillet, mixing with the sauce.
  • Cook the farfalle pasta according to package instructions, then drain.
  • Toss the cooked pasta into the skillet with the creamy garlic sauce. Adjust consistency with reserved pasta water if needed.
  • Stir in additional seasonings before serving.

Serving

  • Serve warm, garnished with chopped fresh basil.
