  • 2 lb boneless skinless chicken breasts lean protein
  • 1/4 cup all-purpose flour for coating
  • 1/4 cup cilantro, chopped for freshness
  • 2 tbsp coconut oil for sautéing
  • 1 tbsp olive oil for sautéing
  • 1 clove garlic, minced for flavor
  • 1 cup coconut milk for creaminess
  • 2/3 cup chicken broth for moisture
  • 1 tbsp brown sugar or sub coconut sugar for sweetness
  • 2 limes for zest and juice
  • 1 green onion, chopped for garnish
  • Salt and pepper to taste for seasoning

Preparation

  • Use a meat mallet or rolling pin to gently pound the chicken breasts to an even thickness.
  • Season the chicken with salt and pepper on both sides.
  • Lightly coat the seasoned chicken breasts with flour, shaking off any excess.

Cooking

  • In a large skillet, heat the coconut oil and olive oil over medium heat until shimmering.
  • Add the coated chicken to the hot skillet in a single layer. Cook for about 5-6 minutes on each side until golden brown.
  • Remove cooked chicken from the pan and keep it warm.
  • In the same skillet, add the minced garlic and sauté for about one minute until fragrant.
  • Pour in the coconut milk and chicken broth, whisking to combine.
  • Stir in the brown sugar and juice of one lime, then bring the sauce to a gentle simmer.
  • Return the chicken to the skillet, allowing it to simmer in the sauce for a few minutes.
  • Just before serving, stir in the chopped cilantro and the zest of the remaining lime.

Serving

  • Serve the creamy coconut lime chicken garnished with additional cilantro and chopped green onions.

Notes

Make sure to pound the chicken to an even thickness for uniform cooking. Adjust the thickness of the sauce by adding more broth if necessary. Use fresh herbs just before serving for the best flavor.
