  • 2 tablespoons olive oil moisture
  • 1 tablespoon butter rich flavor
  • 4 cloves garlic, minced pungent aroma
  • 1 cup tomatoes, diced freshness
  • 2 cups spinach, chopped (optional) nutritional addition
  • 2 cups heavy cream rich creaminess
  • 1/2 cup Parmesan cheese, shredded or grated salty depth

Preparation

  • Start by cooking the dry pasta according to the package directions in a large pot of salted boiling water. Stir occasionally until the pasta is al dente.
  • Drain the pasta once cooked and set aside, reserving a bit of the pasta water if necessary for later.
  • Cut the boneless skinless chicken breast into bite-sized pieces and season with garlic powder, Italian seasoning, paprika, salt, and pepper.
  • Heat olive oil and butter over medium heat in a skillet.

Cooking

  • Add the seasoned chicken to the skillet in a single layer, cooking for a few minutes without stirring to allow it to brown.
  • Stir the chicken to ensure even cooking, continuing until browned and cooked through, about 5 to 7 minutes.
  • Add minced garlic to the skillet and cook for 1 minute until fragrant, being careful not to let it burn.
  • Stir in the diced tomatoes, allowing the mixture to simmer for a few minutes.
  • If using, fold in the chopped spinach and give it a moment to wilt down.
  • Pour in the heavy cream and stir until well mixed, bringing the mixture to a simmer to thicken slightly.
  • Add the cooked pasta to the skillet, tossing everything together to ensure the pasta is evenly coated.
  • Sprinkle Parmesan cheese over the top and stir until melted and incorporated.
  • Taste and adjust seasoning with salt and pepper before serving.

Notes
