Ingredients
  

Main Ingredients

  • 2 tbsp olive oil
  • 2 chicken breasts boneless, skinless, pounded evenly
  • 8 oz gluten-free farfalle pasta or pasta of choice
  • 2 tbsp butter
  • 2 tsp dry shallots
  • 1 tsp Italian seasoning
  • 2 tbsp gluten-free flour
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 3/4 cup Parmesan cheese freshly grated
  • reserved pasta water as needed to loosen sauce

Chicken Seasoning

  • 1 tsp paprika
  • 1 tsp oregano
  • 1 tsp garlic powder
  • 1/2 tsp thyme
  • salt & pepper to taste

Instructions
 

  • Cook pasta in salted boiling water according to package directions. Reserve 1/2 cup of pasta water before draining.
  • Mix paprika, oregano, garlic powder, thyme, salt, and pepper. Season the chicken evenly on both sides.
  • Heat olive oil in a large skillet. Sear the chicken until golden and fully cooked (165°F internal). Remove and set aside.
  • In the same skillet, melt butter. Add dry shallots, garlic powder, and Italian seasoning. Stir until fragrant.
  • Stir in gluten-free flour to make a roux. Whisk in chicken broth and heavy cream until smooth.
  • Add Parmesan and stir until melted. Adjust thickness with pasta water as needed.
  • Add cooked pasta to the sauce and toss to coat.
  • Slice the chicken and return it to the skillet. Stir to combine. Serve warm with extra Parmesan if desired.

Notes

Use fresh Parmesan for the creamiest results. Add vegetables like spinach or mushrooms for extra nutrition. Store leftovers in the fridge up to 4 days or freeze for 2 months.
