  • 1 pieces yellow bell pepper, sliced
  • 1 small onion, sliced
  • 3 cloves garlic, minced
  • 2 teaspoons fajita seasoning
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 4 ounces cream cheese, softened
  • ½ cup grated Parmesan cheese
  • 1 can (10 ounces) diced tomatoes
  • ½ teaspoon red pepper flakes (optional)
  • 12 ounces penne pasta or preferred pasta
  • 1 tablespoon butter
  • Fresh cilantro and lime wedges for garnish

Instructions
 

Cooking the Chicken

  • Heat olive oil in a large skillet over medium-high heat. Add the sliced chicken, seasoning with fajita seasoning, smoked paprika, salt, and pepper. Cook for about 4 to 5 minutes on each side until golden brown and cooked through. Remove the chicken and set aside.

Sautéing Vegetables

  • In the same skillet, add more olive oil if necessary and sauté the sliced bell peppers and onion for about 3 to 4 minutes. Add minced garlic and sauté for an additional 30 seconds until aromatic.

Making the Sauce

  • Pour in the chicken broth, followed by heavy cream and diced tomatoes. Stir to combine, then add softened cream cheese and grated Parmesan, stirring until melted and smooth. If desired, add red pepper flakes.

Cooking the Pasta

  • Add the uncooked pasta, stirring to ensure it is submerged. Cover and simmer over medium heat, stirring occasionally, for 12 to 15 minutes until pasta is tender and sauce thickens. Return the cooked chicken to the skillet.

Final Touches

  • Remove from heat and stir in the butter until melted. Garnish with fresh cilantro and a squeeze of lime juice before serving.

Notes

Make sure to slice the chicken and vegetables evenly to ensure even cooking. Adjust red pepper flakes to your desired spice level.
