Preparation

  • Season the chicken breasts with salt and freshly ground pepper, ensuring they are evenly coated.
  • Heat the olive oil in a large skillet over medium heat.
  • Add the seasoned chicken breasts and cook undisturbed for a few minutes until golden brown.
  • Flip the chicken to cook on the other side until cooked through, with juices running clear. Then, remove and let rest before slicing.

Cooking the Sauce

  • In the same skillet, melt the unsalted butter, scraping up bits left from the chicken.
  • Stir in the minced garlic, cooking until fragrant without burning.
  • Add the chopped sun-dried tomatoes and Italian seasoning, cooking for a minute.
  • Pour in the heavy cream and milk, stirring continuously to combine and thicken the sauce.
  • Whisk in the freshly grated Parmesan cheese until smooth and velvety.

Combining Pasta and Sauce

  • Cook the penne or macaroni in a large pot of salted boiling water until al dente; do not rinse after draining.
  • Add the cooked pasta to the skillet with the sauce and toss gently to coat.
  • Fold in the baby spinach and stir until wilted before serving.

Notes
