bow tie pasta (farfalle)
cooked until al dente and drained
olive oil
garlic
minced
canned diced tomatoes
use petite diced for smoother texture
sugar
to balance tomato acidity
salt and pepper
to taste
heavy cream
parmesan cheese
hand-grated
fresh basil leaves
chopped, for garnish
Instructions
Bring a large pot of salted water to a boil. Cook the bow tie pasta until al dente, drain, and set aside.
In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant.
Add canned diced tomatoes, sugar, salt, and pepper. Simmer for 2–3 minutes to soften the tomatoes.
Reduce heat to low. Pour in the heavy cream and stir. Add parmesan cheese and stir until melted and creamy.
Add the cooked pasta to the sauce. Toss gently until fully coated.
Stir in chopped fresh basil just before serving. Serve hot and top with extra parmesan if desired.
Notes
Freshly grated parmesan melts best. For a richer version, add grilled chicken or sausage. For lighter fare, add spinach or mushrooms.
