Ingredients
  

Pasta and Sauce

  • bow tie pasta (farfalle) cooked until al dente and drained
  • olive oil
  • garlic minced
  • canned diced tomatoes use petite diced for smoother texture
  • sugar to balance tomato acidity
  • salt and pepper to taste
  • heavy cream
  • parmesan cheese hand-grated
  • fresh basil leaves chopped, for garnish

Instructions
 

  • Bring a large pot of salted water to a boil. Cook the bow tie pasta until al dente, drain, and set aside.
  • In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant.
  • Add canned diced tomatoes, sugar, salt, and pepper. Simmer for 2–3 minutes to soften the tomatoes.
  • Reduce heat to low. Pour in the heavy cream and stir. Add parmesan cheese and stir until melted and creamy.
  • Add the cooked pasta to the sauce. Toss gently until fully coated.
  • Stir in chopped fresh basil just before serving. Serve hot and top with extra parmesan if desired.

Notes

Freshly grated parmesan melts best. For a richer version, add grilled chicken or sausage. For lighter fare, add spinach or mushrooms.
