Preparation

  • Begin by preparing the chicken. Cut the boneless, skinless chicken breasts into bite-sized pieces.
  • In a mixing bowl, combine the cornstarch, salt, black pepper, garlic powder, and paprika. Toss the chicken pieces in the mixture to coat evenly.

Cooking Chicken

  • Heat the vegetable oil in a large skillet over medium-high heat until it shimmers.
  • Add the coated chicken pieces in batches to avoid overcrowding. Cook until golden brown and crispy, about 4 to 5 minutes per side.
  • Remove the chicken from the skillet and drain on paper towels.

Making Sauce

  • In a separate bowl, mix the mayonnaise, sweet chili sauce, and sriracha until well combined.

Assembly

  • Start with a base of cooked jasmine rice in each bowl.
