2cupscherry tomatoeshalved or whole
3tbspolive oil
1–2clovesgarlicgrated or minced
salt and pepperto taste
fresh basiloptional, for garnish
red pepper flakes or heavy creamoptional, for spice or creaminess
Instructions
Preheat oven to 400°F (200°C).
In a baking dish, place the Boursin wheel in the center. Scatter cherry tomatoes and garlic around it. Drizzle with olive oil, season with salt, pepper, and chili flakes if using.
Bake uncovered for 25–30 minutes until tomatoes burst and Boursin is melted and bubbly.
Meanwhile, cook pasta in salted boiling water until al dente. Reserve 1 cup of starchy pasta water before draining.
Remove baking dish from oven. Stir tomatoes and melted Boursin into a creamy sauce.
Toss pasta into the baking dish, adding reserved pasta water as needed to loosen the sauce. Garnish with basil and serve hot.
Notes
Let Boursin soften at room temperature before baking for a creamier sauce. Always save pasta water for silky texture. Slightly undercook pasta so it finishes in the oven.
