  • 1.5 cups shredded gouda or swiss cheese melts beautifully
  • 0.5 cup shredded parmesan cheese adds sharpness

Instructions
 

Preparation

  • Start by preheating your oven to 350°F.
  • In a skillet over medium heat, melt the butter and add the chicken pieces. Cook until lightly browned and cooked through (5-7 minutes).
  • Stir in chopped onion and sliced mushrooms, cooking until onions are translucent and mushrooms are tender (3-4 minutes).

Assembly

  • Add steamed asparagus, chicken broth, heavy cream, kosher salt, pepper, and dried thyme to the skillet. Stir to combine and heat through.
  • In a mixing bowl, combine mayonnaise, dijon mustard, and lemon juice until smooth.
  • Fold the mayonnaise mixture into the skillet, incorporating it with the chicken and vegetables.
  • Transfer mixture to a baking dish and spread evenly.
  • Sprinkle gouda or swiss cheese and parmesan cheese on top.

Baking

  • Bake in preheated oven for 25-30 minutes until cheese is bubbly and golden brown.
  • Remove from oven and let it rest for a few minutes before serving.

Notes

For best results, ensure chicken is uniformly cut and adjust seasoning to your taste. Use fresh asparagus for the best flavor.
