  • 12 oz cranberries fresh or frozen
  • 1 cup sugar
  • 1 can crushed pineapple 8 oz, drained
  • 1 apple diced
  • 1/2 cup pecans or walnuts chopped
  • 1 cup mini marshmallows optional, for fluff-style
  • 1 tub whipped topping or whipped cream 8 oz, optional for creamy version
  • 1 box raspberry or strawberry Jello small box, optional for Jello-style
  • 1/2 cup boiling water if using Jello

Instructions
 

  • Chop cranberries finely using a food processor or blender. Combine with sugar and let sit for 30 minutes to macerate.
  • If using Jello, dissolve it in boiling water and let it cool slightly.
  • In a large bowl, combine cranberries, drained pineapple, diced apple, and chopped nuts.
  • Fold in mini marshmallows and whipped topping if making a fluff-style salad. For Jello-style, gently stir the mixture into slightly thickened gelatin.
  • Chill in the refrigerator for at least 2 hours (overnight is best) before serving.

Notes

This salad is versatile — leave out the marshmallows or whipped topping for a more traditional version, or add Jello for a nostalgic twist. Always allow time for chilling, and toast your nuts for more flavor.
