  • 4 boneless chicken breasts
  • 1 cup fresh or frozen cranberries
  • 0.75 cup orange juice fresh-squeezed preferred
  • 1 tbsp orange zest
  • 1/3 cup honey or maple syrup
  • 2 garlic cloves minced
  • 1 tbsp olive oil
  • 1 tsp ground ginger
  • salt and pepper to taste

Instructions
 

  • Pat chicken dry and season both sides with salt and pepper.
  • In a saucepan, combine cranberries, orange juice, zest, honey, garlic, and ginger. Simmer until cranberries burst and sauce thickens slightly.
  • Heat olive oil in a large skillet over medium-high heat. Sear chicken on both sides until golden, about 2–3 minutes per side.
  • Transfer chicken to a baking dish. Pour the cranberry-orange sauce over the top.
  • Bake at 375°F (190°C) for 25–30 minutes, or until the chicken reaches 165°F internal temperature.
  • Spoon extra sauce over the chicken before serving. Serve warm with rice, roasted potatoes, or a green salad.

Notes

This recipe is great for holidays but easy enough for weeknights. Try adding a splash of soy sauce for an Asian twist or rosemary for a savory touch. Can be frozen fully cooked for up to 2 months.
