  • 4 boneless, skinless chicken breasts
  • 1 cup whole cranberry sauce
  • 1/2 cup orange juice
  • 1 packet onion soup mix
  • 2 tbsp maple syrup
  • 1 tbsp olive oil
  • salt and pepper to taste

Optional Add-Ins

  • fresh rosemary sprigs for garnish or variation
  • Catalina dressing for a retro-style variation
  • 1 tbsp Dijon mustard optional, for tang

Instructions
 

  • Preheat oven to 375°F. Lightly grease a baking dish and place chicken breasts inside. Season with salt and pepper.
  • In a bowl, whisk together cranberry sauce, orange juice, maple syrup, onion soup mix, and olive oil.
  • Pour mixture over the chicken, coating each piece evenly. Bake uncovered for 45 minutes, until chicken is fully cooked and sauce is bubbling.
  • Remove from oven, let rest for 5 minutes. Garnish with rosemary sprigs if desired. Serve warm.

Notes

For a festive twist, add fresh cranberries and pecans before baking. For faster weeknight prep, use shredded rotisserie chicken and bake just 20 minutes. Casserole can be made ahead or frozen in portions.
