  • 4 boneless, skinless chicken breasts
  • 2 cups fresh cranberries or 1 cup dried, rehydrated in warm water
  • 0.5 cup orange juice fresh preferred
  • 0.25 cup honey or maple syrup
  • 2 cloves garlic minced
  • 1 tsp fresh rosemary chopped
  • 1 tbsp olive oil for searing
  • salt and black pepper to taste

Instructions
 

  • Preheat oven to 375°F. Lightly oil a 9x13-inch baking dish.
  • Pat chicken dry and season with salt and pepper. Heat olive oil in a skillet over medium-high heat and sear chicken for 2–3 minutes per side until golden.
  • In a bowl, whisk together orange juice, honey, garlic, and rosemary. Stir in cranberries (or softened dried cranberries).
  • Transfer seared chicken to baking dish. Pour cranberry mixture over the chicken.
  • Bake uncovered for 25–30 minutes, until chicken is cooked through and sauce thickens. Internal temp should reach 165°F.
  • Spoon sauce over the chicken again and let rest for 5 minutes before serving.

Notes

Try pairing with mashed potatoes, roasted vegetables, or wild rice. For added richness, drizzle with balsamic vinegar before baking. Leftovers make great sandwiches or rice bowls.
