Ingredients
  

Main Ingredients

  • 4 boneless, skinless chicken breasts or thighs for juicier results
  • 1 cup cranberries fresh or frozen
  • 1/2 cup orange juice freshly squeezed is best
  • 3 tbsp maple syrup or honey
  • 1 tbsp balsamic vinegar
  • 2 cloves garlic minced
  • 1 tsp fresh rosemary chopped (or 1/2 tsp dried)
  • 1 tbsp olive oil
  • salt and pepper to taste

Instructions
 

  • Pat chicken dry and season with salt and pepper.
  • Heat olive oil in a skillet over medium-high heat. Add chicken and sear for 3–4 minutes per side until golden. Remove from pan and set aside.
  • In the same skillet, add garlic, orange juice, cranberries, maple syrup, balsamic vinegar, and rosemary. Simmer for 5–6 minutes until cranberries burst and mixture thickens slightly.
  • Return chicken to the pan, spoon sauce over top. Cover and simmer for 15–20 minutes, until chicken is cooked through.
  • Serve warm with rice, mashed potatoes, or roasted vegetables. Garnish with rosemary if desired.

Notes

To adapt, use cranberry sauce instead of fresh berries, or swap maple syrup with brown sugar. For a slow cooker version, add all ingredients and cook on low for 4–6 hours.
