Ingredients
  

  • 2 boneless skinless chicken breasts or thighs
  • 1 tablespoon olive oil
  • ½ teaspoon chili powder
  • ½ teaspoon cumin
  • Salt and pepper to taste
  • ½ cup corn kernels fresh, frozen, or canned
  • ½ cup black beans drained and rinsed
  • ¼ cup diced tomatoes or salsa
  • ¼ cup shredded cheddar cheese
  • Optional: chopped cilantro and green onions

Instructions
 

  • Pat chicken dry and season both sides with chili powder, cumin, salt, and pepper.
  • Heat olive oil in a large skillet over medium heat. Add chicken and cook for 5–6 minutes per side until golden and cooked through.
  • Lower heat slightly. Add corn, black beans, and diced tomatoes or salsa around the chicken. Stir gently.
  • Sprinkle cheddar cheese on top. Cover and cook for 2–3 minutes until cheese melts.
  • Top with chopped cilantro and green onions if using.
  • Serve hot straight from the skillet, optionally with warm tortillas.

Notes

For extra flavor, use chicken thighs and spicy salsa. Make sure to drain the beans well to avoid a watery dish.
