Preparation

  • Start by preparing the chicken breasts. Pat them dry with paper towels to remove excess moisture.
  • Sprinkle both sides of the chicken breasts with salt and pepper.
  • In a mixing bowl, combine the all-purpose flour, salt, and pepper. Dredge each chicken breast in the flour mixture.

Cooking

  • In a large skillet, heat the coconut oil and olive oil over medium heat.
  • Add the dredged chicken breasts in a single layer. Cook undisturbed for 5-7 minutes until golden-brown.
  • Carefully flip the chicken and cook until nearly cooked through. Remove and set aside.
  • In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant.
  • Pour in the coconut milk and chicken broth, stirring to combine and allow to simmer.
  • Stir in the brown sugar, lime juice, and lime zest. Simmer for a few minutes.
  • Return the chicken to the skillet and spoon sauce over the top. Cover and cook for another 5-10 minutes.
  • Sprinkle chopped cilantro and green onion over the dish just before serving.

Notes

Ensure chicken is at room temperature before cooking for more even cooking. Adjust lime juice based on your tartness preference. Store leftovers in an airtight container in the refrigerator for up to 3-4 days.
