Ingredients

  • 2 tbsp avocado oil (or cooking oil of choice)
  • 1.5 pounds boneless skinless chicken breasts
  • 1/2 cup minced onion (yellow or white)
  • 2 cloves garlic (minced)
  • 1 tbsp minced fresh ginger
  • 1 red chili (thinly sliced, optional) For heat, if desired
  • 2 tsp lime zest (grated with a microplane)
  • 1 can full-fat coconut milk (13.66 oz)
  • 1 tbsp fish sauce Can substitute with soy sauce
  • 2 tbsp freshly squeezed lime juice
  • 1/4 cup chopped fresh cilantro and/or Thai basil (optional)
  • Additional lime wedges for serving And sliced chili for garnish if desired

Instructions
 

Preparation

  • Heat the avocado oil in a large skillet over medium heat.
  • Add the boneless skinless chicken breasts to the skillet and sear for 6–7 minutes on each side until browned.
  • Remove chicken from the skillet and set aside to allow juices to redistribute.
  • In the same skillet, sauté the minced onion until translucent, about 3–4 minutes.
  • Stir in the minced garlic and ginger, cooking for 1–2 minutes until fragrant.
  • If using, add the sliced red chili and cook for another minute.

Cooking the Sauce

  • Add the lime zest and coconut milk to the skillet, stirring well to combine.
  • Pour in the fish sauce and lime juice, stirring again.
  • Return the browned chicken to the skillet, ensuring it's submerged in the sauce, and cover the skillet.
  • Let chicken cook in the sauce for 10–12 minutes, until cooked through (internal temperature reaches 165°F).
  • Stir in chopped fresh cilantro and/or Thai basil just before serving.
  • Serve warm, garnished with lime wedges and sliced chili if desired.

Notes

Take your time browning the chicken for deeper flavor. Fresh herbs are best added at the end for maximum freshness.
