  • 1 teaspoon kosher salt Enhances overall flavor.
  • 1 teaspoon freshly ground black pepper Adds warmth to the salad.

Preparation

  • Begin by preparing the chicken. Use 4 cups of cooked, shredded chicken breast, ensuring it's cool enough to handle and tear it into bite-sized pieces.
  • Chop the celery into small pieces, measuring 1 cup, and set aside.
  • Cut 1 cup of red grapes in half, and remove any seeds if present.
  • Chop ⅓ cup of red onion finely and set aside.
  • In a large mixing bowl, combine the shredded chicken, chopped celery, halved grapes, and chopped red onion, mixing well.
  • Add ¼ cup of toasted sliced almonds to the bowl and gently fold them in.
  • Measure out and add 1 cup of mayonnaise to the mixture, ensuring it coats everything evenly.
  • Pour in ¼ cup of fresh lemon juice and mix thoroughly.
  • Season with 1 teaspoon of kosher salt and 1 teaspoon of freshly ground black pepper, stirring one last time.
  • Cover the salad and refrigerate for at least 30 minutes to allow flavors to meld together.

Notes

For best results, ensure chicken is well-cooked and tender. Refrigerating for a couple of hours allows flavors to develop nicely. Adjust seasoning as necessary based on personal taste.
