Preparation

  • Place the cooked chicken into a large mixing bowl. If not already chopped or shredded, do so now.
  • Add the finely diced celery, red onion, and chopped Italian parsley to the bowl. Gently mix these ingredients together.
  • In a separate mixing bowl, combine the mayonnaise, Dijon mustard, lemon juice, kosher salt, garlic powder, and ground black pepper. Stir until smooth.
  • Pour the mayonnaise mixture over the chicken and vegetable mixture in the large bowl. Use a gentle folding motion to combine.
  • Taste the salad and adjust the seasoning if necessary, adding more salt, pepper, or lemon juice as needed.
  • Cover with plastic wrap or a lid and refrigerate for at least 30 minutes to meld flavors.

Notes

Use leftover rotisserie chicken for quicker prep. For added crunch, consider nuts or apples. Keep the salad chilled before serving for the best texture.
