  • 1 can black beans, drained and rinsed provides protein and fiber
  • 1 piece red bell pepper, sliced adds sweetness and crunch
  • 2 pieces avocados, sliced creamy texture that enhances richness

  • ½ cup tortilla strips provide crunch

Instructions
 

Preparation

  • Start by preparing the marinade for the chicken. In a mixing bowl, combine the juice and zest of one lime, garlic powder, cumin, chili powder, salt, honey, and avocado oil. Whisk the ingredients together until fully blended.
  • Place the two chicken breasts into a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring it’s well coated. Seal the bag or cover the dish and let the chicken marinate in the refrigerator for at least 30 minutes.

Cooking

  • Heat your grill or grill pan over medium-high heat. Once hot, remove the chicken from the marinade. Grill the chicken for about 6-7 minutes per side, or until it reaches an internal temperature of 165°F.
  • Once cooked, transfer the chicken to a cutting board and allow it to rest for about 5 minutes.

Assembly

  • In a large bowl, combine the chopped lettuce, diced tomatoes, black beans, sliced bell pepper, sliced avocados, corn, and red onion. Gently toss to mix.
  • Slice the grilled chicken into strips or bite-sized pieces. Add the chicken to the bowl of salad ingredients and mix gently.
  • Drizzle ranch dressing over the salad mixture and add hot sauce. Toss until the salad is evenly coated.
  • Serve the salad topped with crispy tortilla strips, sprinkle cilantro over, and add lime wedges on the side.

Notes
