For the mashed potatoes

  • 2 cups mashed potatoes smooth and creamy, from boiled potatoes

Instructions
 

Preparation

  • Preheat your oven to 375°F.
  • In a mixing bowl, combine the honey and chipotle sauce; stir until fully blended.
  • Season the chicken thighs with salt and pepper on both sides.

Cooking chicken

  • In an oven-safe pan over medium heat, place the chicken thighs skin-side down and cook until golden brown.
  • Flip the chicken thighs over and pour the honey chipotle mixture over them.
  • Pour the chicken broth into the pan.
  • Transfer the pan to the preheated oven and bake until the chicken is cooked through and the glaze is bubbly.

Making mashed potatoes

  • Boil potatoes until fork-tender, then drain and return to the pot to evaporate moisture.
  • Mash the potatoes with butter and smoked gouda until smooth. Adjust with salt and pepper to taste.

Serving

  • Plate the mashed potatoes alongside the chicken thighs, pouring any remaining glaze over the chicken.
  • Garnish with fresh herbs if desired and serve warm.

Notes

For best results, use bone-in skin-on chicken thighs. Ensure the mashed potatoes are well-drained. Allow chicken to rest before cutting. Store leftovers in airtight containers for up to three days.
