Instructions
 

Preparation

  • Trim excess fat or skin from the chicken pieces. Ensure they are of consistent size for even cooking.
  • In a mixing bowl, combine the olive oil, butter, minced garlic, hot sauce, and red pepper flakes. Whisk until cohesive.
  • Coat the chicken pieces in the marinade thoroughly and let marinate for at least 30 minutes.

Cooking

  • Preheat the grill or grill pan over medium heat.
  • Remove chicken from the marinade, letting excess drip off, and place on the grill.
  • As the chicken grills, sprinkle parsley, Parmesan, paprika, garlic powder, onion powder, salt, and pepper on top.
  • Grill chicken for about 6–8 minutes on one side, check for doneness, then flip and grill for another 6-8 minutes.
  • Remove from grill and let rest for a few minutes before serving.
  • Serve on a platter, garnished with extra parsley and lime if desired.

Notes

For best results, pound thick chicken to an even thickness, marinate longer if possible, and ensure the grill is clean. Use a meat thermometer to check doneness.
