Instructions
 

Preparation

  • Season the chicken thighs with kosher salt, black pepper, garlic powder, onion powder, and paprika evenly on both sides.
  • Heat olive oil in a large skillet over medium-high heat until shimmering.

Cooking

  • Place the seasoned chicken thighs skin-side down in the skillet, avoiding overcrowding.
  • Cook for 5-7 minutes until the skin is golden brown and lifts easily from the skillet.
  • Flip the chicken thighs and add the butter to the pan.
  • Continue cooking for an additional 5-7 minutes until cooked through.
  • Remove chicken from pan and let it rest on a plate, loosely covered with foil.
  • In the same skillet, sauté minced shallot and garlic for 1-2 minutes until softened.
  • Pour in chicken broth and lemon juice, scraping the skillet's bottom to incorporate flavors.
  • Simmer for 2-3 minutes to reduce slightly.
  • Stir in thyme and crushed red pepper flakes (if using) along with heavy cream, simmering until thickened.
  • Return chicken to the skillet, spoon sauce over it, and heat through.
  • Serve chicken on a platter, drizzled with creamy sauce and garnished with parsley.

Notes

For crispier skin, pat chicken dry before seasoning. Always taste the sauce before serving to adjust the seasoning if needed.
