Preparation

  • Begin by preparing your chicken. Place the boneless skinless chicken into a large pot and season generously with salt and pepper. Cover the chicken with chicken broth and bring to a gentle boil over medium heat. Allow to simmer for 15 to 20 minutes until cooked through.
  • Once cooked, remove the chicken from the pot and set aside to cool slightly. Reserve the broth for later use. Shred the chicken into bite-sized pieces.
  • In the same pot, melt the butter over medium heat. Add the finely diced onion and minced garlic, sauté until the onions are translucent (about 3 to 5 minutes).
  • Stir in onion powder, mustard powder, dried thyme, dried rosemary, ground sage, and black pepper. Cook for another minute to enhance the flavors.
  • Sprinkle the flour over the mixture, stirring to combine. Cook for an additional 1 to 2 minutes.
  • Gradually pour in the reserved chicken broth, whisking continuously to prevent lumps. Stir until thickened and simmering.
  • Stir in half and half, chicken bouillon, and Worcestershire sauce until well combined.
  • Add the shredded chicken and frozen vegetables to the pot. Stir until everything is coated in the sauce.

Assembly and Baking

  • Spread the chicken filling evenly in the bottom of a prepared baking dish.
  • Dollop the warm mashed potatoes on top and spread evenly across the filling.
  • Bake in a preheated oven for about 25 to 30 minutes or until the top is golden and slightly crispy.
  • Let cool for a few minutes before serving.

Notes

For best results, use warm mashed potatoes and allow the pie to rest after baking for easier serving. Adjust seasoning according to taste before baking. You can store leftovers for up to 3 days in the refrigerator.
