Ingredients
  

  • 8 oz whole wheat pasta penne or spaghetti
  • 2 chicken sausages sliced
  • 1 tablespoon olive oil
  • 1 small onion diced
  • 2 garlic cloves minced
  • 1 cup cherry tomatoes halved
  • 2 cups spinach or kale optional
  • ½ teaspoon dried Italian herbs
  • Salt and pepper to taste
  • Grated parmesan optional

Instructions
 

  • Bring a large pot of salted water to a boil. Cook pasta according to package instructions until al dente. Drain and set aside, reserving ½ cup pasta water.
  • Heat olive oil in a large skillet over medium heat. Sauté diced onion for about 3 minutes until softened.
  • Add minced garlic and sliced chicken sausage. Cook for 5–7 minutes until sausage is browned and heated through.
  • Stir in halved cherry tomatoes and cook for about 4 minutes until softened.
  • Add spinach or kale if using. Stir and cook for 1–2 minutes until wilted.
  • Return cooked pasta to the skillet. Toss with herbs, salt, pepper, and reserved pasta water as needed.
  • Top with grated parmesan if desired. Serve hot and adjust seasoning as needed.
