Preparation

  • Start by placing the four boneless skinless chicken breasts at the bottom of your slow cooker.
  • Add the peeled and cubed gold potatoes over the chicken.
  • Add the chopped medium onion and the chopped celery to the slow cooker.
  • Sprinkle in the minced garlic, dried thyme, salt, and pepper.
  • Pour in the two cans of cream of chicken soup, ensuring to cover all other ingredients.
  • Pour the cup of chicken broth over the mixture.
  • Blend in the half cup of heavy cream or whole milk.
  • Stir in the 16-ounce bag of frozen mixed vegetables.
  • Cover your slow cooker and cook everything on low for 6-8 hours or on high for 3-4 hours.
  • When done, remove the chicken breasts, shred them with two forks, and return to the soup.
  • Serve the soup warm, accompanied by biscuits and garnished with fresh parsley if desired.

Notes

For tender chicken, do not overcook. Use fresh or frozen vegetables, avoid canned. Adjust creaminess by modifying the heavy cream or milk. Always taste and adjust seasoning before serving.
