Preparation

  • In a large pot over medium heat, melt the butter until it begins to foam.
  • Stir in the diced onions, carrots, and celery, allowing them to soften for about 5 minutes.
  • Add the fresh thyme, pinch of turmeric, and season with kosher salt and black pepper.
  • Sprinkle the flour over the mixture, stirring continuously for about 2 minutes.

Cooking

  • Pour in the white wine while whisking to incorporate it smoothly.
  • Gradually stir in the chicken broth and bring to a gentle simmer.
  • Add in the shredded rotisserie chicken and stir until warmed through.
  • Lower the heat and stir in the heavy cream and cheddar cheese until fully combined and creamy.

Serving

  • Taste and adjust seasonings with more salt and pepper if needed.
  • Sprinkle the freshly chopped parsley on top and serve warm.
