Ingredients

  • 2 lbs chicken breast or thighs, boneless and skinless
  • 1 can cream of chicken soup
  • 2 cups frozen mixed vegetables peas, carrots, corn, green beans
  • 1 medium onion diced
  • 2 cups chicken broth
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • salt and pepper to taste
  • 1 cup heavy cream added at the end

  • refrigerated biscuits baked separately
  • pie crust or puff pastry baked separately

Instructions
 

  • Place chicken in the bottom of the crock pot. Add diced onion and frozen vegetables on top. Sprinkle with garlic powder, onion powder, salt, and pepper.
  • Pour in cream of chicken soup and chicken broth. Stir gently to combine.
  • Cover and cook on low for 6–7 hours or high for 3–4 hours, until chicken is tender.
  • Remove chicken and shred with two forks. Return it to the pot and stir in heavy cream.
  • Bake biscuits, pie crust, or puff pastry separately until golden. Serve pot pie filling in bowls topped with your pastry of choice.

Notes

For extra veggies, stir in spinach, kale, or zucchini during the last hour of cooking. To thicken, remove the lid for 30 minutes or use a cornstarch slurry. Always bake your pastry topping separately for the best texture.
