For the Chicken

  • 2 pieces chicken breasts, boneless and skinless sliced lengthwise into 4 cutlets and pounded thin
  • 2 teaspoons Italian seasoning adds a mix of herbal flavors

For the Sandwiches

  • 2 large ciabatta bread rolls or 3 sandwich size rolls

  • 8 ounces fresh mozzarella cheese, sliced offers a creamy, melty consistency
  • 2 pieces tomatoes, sliced provides juiciness and freshness

Preparation

  • Slice the boneless, skinless chicken breasts lengthwise into four cutlets and pound each cutlet to a thin, even thickness using a meat mallet.
  • Season the chicken with Italian seasoning along with salt and pepper on both sides.
  • Heat the olive oil in a skillet over medium heat and add the seasoned chicken cutlets once the oil is hot.
  • Cook the chicken cutlets until they are golden brown and cooked through, turning once for even browning.
  • While the chicken is cooking, slice the ciabatta rolls in half and set them aside.
  • Mix the mayonnaise with the pesto in a small bowl until well combined.
  • Once the chicken is fully cooked, remove it from the skillet and allow it to rest for a few minutes before slicing the mozzarella and tomatoes.

Assembly

  • Spread a generous amount of the pesto mayo mixture on the cut sides of each roll.
  • Layer the sliced chicken, followed by fresh mozzarella and sliced tomatoes on each roll.
  • Add a pinch of salt to the tomatoes for enhanced flavor before closing the sandwiches with the top halves of the rolls.
  • Serve immediately or grill briefly to melt the cheese further and toast the bread.

Notes

Make sure to pound the chicken cutlets to a uniform thickness for even cooking, and allow the chicken to rest after cooking to retain moisture. Optionally, consider grilling or toasting the finished sandwich for added crispness.
