  • 2 small chicken breasts protein-rich, tender
  • 2 tablespoons pesto herbaceous, flavorful sauce
  • 2 ciabatta buns ciabatta buns toasty, chewy texture
  • 1 extra virgin olive oil adds richness, moisture
  • 6 slices mozzarella cheese creamy, mild flavor
  • 1 tomato, sliced fresh, juicy texture
  • 1 handful arugula peppery greens for added crunch

Preparation

  • Start by heating a skillet over medium heat and adding a drizzle of extra virgin olive oil.
  • Season the chicken breasts with salt and pepper as desired.
  • Place the seasoned chicken breasts in the skillet and cook for about 4–6 minutes on one side.
  • Flip the chicken breasts over and cook for an additional 4–6 minutes until fully cooked.
  • While the chicken rests, slice your ciabatta buns in half.
  • Spread 1 tablespoon of pesto on the bottom half of each ciabatta bun.
  • Layer on 3 slices of mozzarella cheese atop the pesto on each bun.
  • Slice the rested chicken breasts and layer them over the cheese.
  • Add a few slices of fresh tomato on top of the chicken.
  • Add a handful of arugula on top for a peppery bite.
  • Place the top half of the ciabatta buns over the filled bottom halves to complete the sandwiches.

Notes

This sandwich pairs well with fruit for breakfast or a light salad for lunch. Use a meat thermometer to ensure chicken is cooked to 165°F.
