Preparation

  • Slice the roasted tomato and Parmesan focaccia bread into your desired sandwich size.
  • Cook the pesto-marinated chicken breasts until fully cooked and golden outside.
  • Let the chicken rest before slicing it into thin pieces.
  • Slice the fresh mozzarella cheese into even pieces.

Assembly

  • Take one slice of focaccia bread, layer with sliced pesto chicken, then add fresh mozzarella cheese.
  • Add roasted red peppers on top of the cheese layer.
  • Drizzle additional pesto sauce over the roasted red peppers.
  • Place the second slice of focaccia on top and press down gently.
  • Toast the sandwich in a skillet or grill, if desired.
